Blueberry Pie for Eye Health

Here's a delicious and eye-friendly blueberry pie recipe that uses natural sugar to help support your vision. Blueberries are packed with antioxidants, particularly vitamin C and E, which are essential for maintaining healthy eyes.

Ingredients

For the Crust:

  • 2 1/2 cups whole wheat flour

  • 1 cup cold unsalted butter, cut into small cubes

  • 1/4 cup cold water

  • 1/4 cup pure maple syrup

  • 1/4 teaspoon salt

For the Filling: 

  • 4 cups fresh blueberries

  • 1/2 cup honey or pure maple syrup

  • 1/4 cup cornstarch or arrowroot powder

  • 1 tablespoon lemon juice

  • 1 teaspoon lemon zest

  • 1 teaspoon vanilla extract

For the Topping:

  • 1 egg, beaten (for egg wash)

  • 1 tablespoon coconut sugar (optional, for sprinkling)

 

Instructions

Prepare the Crust

    • In a large bowl, mix the flour and salt.

    • Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

    • Add the maple syrup and cold water, mixing just until the dough comes together. If the dough is too dry, add a little more water, one tablespoon at a time.

    • Divide the dough into two discs, wrap each in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling

    • In a large bowl, combine the blueberries, honey or maple syrup, cornstarch or arrowroot powder, lemon juice, lemon zest, and vanilla extract. Mix well to coat the blueberries evenly.

Assemble the Pie

    • Preheat the oven to 375°F (190°C).

    • On a floured surface, roll out one of the dough discs to fit a 9-inch pie dish. Transfer the dough to the pie dish, pressing it gently into the bottom and sides.

    • Pour the blueberry filling into the crust, spreading it evenly.

    • Roll out the second dough disc and place it over the filling. Trim any excess dough and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.

    • Brush the top crust with the beaten egg and sprinkle with coconut sugar, if desired.

Bake the Pie

    • Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

    • Allow the pie to cool completely before slicing and serving.
