Birdy’s Playful Protein Muffins

My family is always on the hunt for healthy, quick snacks. I found a recipe for protein muffins and added my upgrades!


Ingredients:

  • 1 cup mashed ripe banana
  • 1 egg
  • 4 tbsp honey
  • 3 tbsp coconut oil melted
  • ¼ cup yogurt
  • ¾ cup oat flour
  • ½ cup protein powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ cup chocolate chips
  • ¼ cup nut of choice
  • ⅛ cup dried fruit - if desired


Instructions:

  1. Preheat the oven to 350°
  2. Mash banana until smooth. Stir egg, honey, yogurt, and oil
  3. Add oat flour, protein powder, baking powders, cinnamon, and ginger
  4. Fold in chocolate chips, nuts, and fruit
  5. Pour mix into muffin papers
  6. Bake for 15 minutes or until golden brown


It's super quick, easy, and filling. Perfect for a quick breakfast or an out-and-about snack. I love mixing and matching ingredients based on my mood or my family’s requests. You can substitute most of the ingredients for others. Honey can be maple syrup or agave, two eggs instead of a banana, any flavor of protein powder, any type of nut or dried fruit, or even a mix for a trail mix-esque muffin. My favorite combination is chocolate protein powder with chocolate chips, chopped pecans, almond slivers, and dried cranberries! It’s also a great way to engage kids, letting them help pick the ingredients and assist in the cooking process.
