Ingredients:
- 3/4 cup butter, salted
- 1/4 cup milk
- 1/4 cup fresh mint, chopped
- 2 eggs
- 1/2 cup brown sugar, packed
- 1/4 tsp salt
- 1 tsp vanilla
- 1 cup flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- Optional: fudge frosting, salt, nuts, etc.
Directions:
- In a saucepan, combine the butter and milk. Heat until the butter just melts and is warm. Do not overheat!
- Add the mint, stir, and remove from the heat. Cover the pan and let steep for at least ten minutes.
- Preheat oven to 350 and grease a 8" square pan.
- Whisk together flour, salt, cocoa, and baking powder. Set aside.
- In a bowl, mix together the butter mixture with eggs, sugar, and vanilla. Mix well.
- Pour the wet ingredients into the dry and mix until just incorporated.
- Add any optional ingredients (except frosting), fold in.
- Spread the batter into the pan and bake 20-25 minutes, until a toothpick comes out clean.
- Let cool completely before frosting.
